Ingredients for 4 people
- Salt
- Pepper
- 1 dose of saffron
- 1 bunch of parsley + coriander
- 15 cl of olive oil
- 2 onions
- 1 chicken
- 500 g green olives
- 3 cloves of garlic
- 1/2 teaspoon couscous spices
- 1/2 teaspoon paprika

The procedure to follow to make this Marmiton-style chicken with olives recipe
Roughly cut the onions into strips after peeling them.
Do the same with the garlic.
Cut into quarters and remove the green sprout in the middle.
Chop the parsley and coriander.
Pour a little olive oil into a pot (or casserole dish) and add the chicken cut into pieces.
Season with salt and pepper.
Lightly brown the chicken over medium heat, stirring occasionally.
Once the chicken is browned, put in the pot: 20 cl of water, the onions, garlic, all the spices and 1 handful of green olives.
Mix.
Leave to simmer for 20 to 25 minutes, stirring occasionally (to have plenty of sauce, add water as it cooks and add spices if necessary).
When the chicken is cooked, remove it from the pot and add the rest of the olives, mix well and leave to simmer again over low heat.
When ready to serve, place the chicken pieces in a large dish, pouring the sauce (and green olives) on top.
