  1. Rinse the Rice: Start by rinsing the basmati rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice from becoming sticky.
  2. Prepare the Butterfly Pea Flower Water: In a pot, bring 4 cups of water to a boil. Add the dried butterfly pea flowers and let them steep until the water turns a deep blue color. Strain and set aside.
  3. Cook the Rice: In a large pot, heat 2 tablespoons of ghee over medium heat. Add the cumin seeds, cardamom pods, and cinnamon stick. Sauté until fragrant.
  4. Add Aromatics: Add the sliced onions and garlic to the pot. Sauté until the onions become translucent and start to brown.
  5. Combine and Cook: Add the rinsed rice to the pot and stir to coat the grains with the ghee and spices. Pour in the butterfly pea flower water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and the water is absorbed (about 15-20 minutes).
  6. Finish and Serve: Once the rice is cooked, remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork, then stir in the remaining tablespoon of ghee. Garnish with fresh coriander before serving.
