The classic one Cabbage soup is very low in calories and is therefore known as the perfect soup for losing weight. With my recipe, the soup with white cabbage is very easy to make. It is wonderfully hearty, spicy and warms you on cold days. Definitely try it out!
Cabbage soup – not just for losing weight
You’ve probably heard of it before Cabbage soup diet heard? Cabbage soup is particularly popular in January, when good resolutions are made. But even if you don’t want to lose weight, it’s worth giving the soup a try! Because it’s packed with healthy vegetables, incredibly spicy and aromatic and really quick to make.
All you need is a few vegetables, broth and spices!
My favorite vegetables for magical cabbage soup
I combine that White cabbage with Onions, carrots, green beans, paprika and celery. Everything together creates a wonderfully aromatic taste.
But you are very flexible when it comes to vegetables. Corn, broccoli, zucchini, kale, mushrooms or cauliflower also work very well. The cabbage soup is also great for using up leftovers if you have vegetables left over from the day before.

Step 1: Prepare vegetables
First, cut the white cabbage into bite-sized pieces, chop the onion, cut the celery into thin slices, quarter the beans, dice the peppers and cut the carrots into small pieces.
Step 2: Cook soup
Now heat oil in a pot and briefly sauté onions, celery and carrots. Then add the white cabbage, peppers, chopped tomatoes and vegetable stock and bring the soup to the boil. Simmer for 20 minutes, then add the beans and simmer again until the vegetables are soft.
You can easily prepare the soup in advance and store it in the refrigerator for about 4 days. It is the perfect, light lunch or dinner if you want to eat healthy.

The classic cabbage soup is very low in calories, packed with vegetables and is known as the perfect soup for losing weight.
preparation 20 minutes Min.
Cooking time 30 minutes Min.
Total time 50 minutes Min.
Remove the stalk from the white cabbage and cut the cabbage into bite-sized pieces. Chop the onion finely. Slice the celery, dice the peppers, quarter the beans, peel the carrots and cut them into small pieces.
Heat oil in a pot and sauté onions, celery and carrots for 2 minutes. Then add the white cabbage, peppers, chopped tomatoes and vegetable stock and bring everything to the boil. (Add enough vegetable broth until the vegetables are completely covered)
Let the cabbage soup simmer for 20 minutes, seasoning with parsley, salt and pepper. Fold in the beans and simmer for another 10-20 minutes, depending on how soft you like your vegetables.
Shelf life in the refrigerator: 4 days
