Carbonara, a rich and delicious pasta, a recipe with strictly four ingredients and many stories and legends to accompany it.

A recipe that comes to us from our neighbor Italy, which is only 20º century it became especially loved in our country. In this article we will try to unravel her story.

The history of carbonara

What could charcoal workers have to do with the creation of one of Italy’s most famous pastas? It probably has but let’s start things from the beginning.

To this day, many stories have been heard and as many have been written about the creation of this recipe, but we do not know the exact truth.

One version calls for carbonara, the favorite dish of charcoal workers in the Rome area, thanks of course to the energizing ingredients it contains (egg, pancetta and pecorino). Its name therefore came from the Italian word carbonari (miners). Still others argue that its name came from the abundance of freshly ground pepper that always comes at the end, which looks like carbone. Another version claims that this recipe is a tribute to the secret organization of the Carbonari who supported with their work the unification of Italy at the end of the 19th centuryu century (1870). An even more simplified explanation says that this dish made its maiden appearance at the restaurant La Garbonara in the city of Rome in the early 20u century and became famous after its presentation in La Stampa newspaper only in 1950.

However, there is another myth that tends to be the most prevalent. During the liberation of Italy by the Allies in 1944, due to the lack of food and poverty, the Allied troops distributed rations of eggs and meat (bacon) powder to the army. So they seasoned their pasta with this pulp after diluting it with water.

The original carbonara recipe

The Italians are strict, the recipe allows only four ingredients, egg, guanciale (pancetta), grated pecorino and plenty of pepper. The recipe, although simple, is based on the special technique of pasteurizing eggs.

The type of pasta used is most commonly spaghetti, but linguini or fettuccine also work well.
