Ingredients:

  • 1 dragon fruit
  • 1 cup rice
  • 1 onion, sliced
  • 1 potato, diced
  • 1/2 cup broccoli florets
  • 1/2 cup carrots, diced
  • 200g shrimps, peeled and deveined
  • Water, as needed
  • Chinese curry spices or your favorite spices, to taste
  • Salt, to taste
  • Oil, for frying

Instructions:

  1. Prepare the Rice:

    • Peel and mash the dragon fruit in a bowl.
    • Rinse the rice until the water runs clear.
    • Combine the mashed dragon fruit with the rice in a rice cooker.
    • Add the appropriate amount of water (usually 1:1 ratio with rice).
    • Cook according to the rice cooker’s instructions.
  2. Cook the Shrimps and Vegetables:

    • Heat oil in a saucepan over medium heat.
    • Add the sliced onions and fry until they become translucent.
    • Add the diced potatoes, broccoli, and carrots to the saucepan.
    • Stir-fry the vegetables for about 5 minutes or until they start to soften.
    • Add the shrimps to the saucepan and cook until they turn pink and are cooked through.
    • Pour in enough water to create a sauce, but not too much as to make it soupy.
    • Season with Chinese curry spices or your favorite spices, and salt to taste.
    • Simmer everything together for another 5-10 minutes, allowing the flavors to meld.
  3. Serve:

    • Fluff the dragon fruit rice with a fork and serve it on a plate.
    • Top the rice with the shrimp and vegetable mixture.
    • Enjoy your vibrant and tasty meal!
