What are dumplings?

Dumplings are a classic in Chinese cuisine. The little ones Dumplings are available with a wide variety of fillings and in different shapes: filled with meat, fish or vegetarian, shaped as a smooth crescent, with folds or as small pillows. The dough is made from flour and hot water, rolled out thinly and into circles (6–8 cm Ø). For quick dumplings, use ready-made dumpling dough from the Asian store. They are often eaten with other Chinese snacks – so-called dim sum, for example spring rolls. Dumplings are steamed, boiled or fried and steamed.

Preparing Chinese dumplings: this is how it works

Ingredients for 4 servings (as… Appetizer)

1. Allow the dumpling dough to thaw (this takes about 2 hours at room temperature). Finely chop the chives. Peel and finely grate the ginger. Put the meat and egg in a bowl. Add ginger and knead thoroughly. Stir in sesame oil and chives.

2. Place a tablespoon of filling in the middle of each dough circle.

3. Brush the edge with a little water and press together firmly.

4. Fold the edge into small folds.

5. Coated pan with Wipe out oil and add half of the dumplings. Fry vigorously.

6. Deglaze dumplings with 100 ml water.

7. Cover and steam for 3 minutes. Cook the remaining dumplings as described. Mix soy sauce with vinegar and serve with the dumplings.
