Delicious can often be as simple as these delicious puff pastry pockets with strawberry filling. They are the perfect proof of this. The puff pastry becomes nice and crispy and the sweet strawberries provide a fruity surprise with every bite. Puff pastry – the all-rounder for quick and creative baking ideas
Who can resist crispy puff pastry that can be transformed into so many delicious variations? Puff pastry has proven to be a lifesaver for me in many situations, so I always have a roll in the fridge. When spontaneous visitors come to the door, I can conjure up something in no time at all – be it savory or sweet, cold or warm. And the best thing about it: With puff pastry you can set not only tasteful but also visual highlights that are guaranteed to be a real eye-catcher. I actually prefer strawberries fresh and cold rather than warm and cooked, but they taste wonderful in this filling.
Vegan puff pastry
Did you know that puff pastry is usually vegan? I actually always thought puff pastry was dough with butter, but my vegan colleague pointed this out to me. And instead of brushing the dough with egg at the end, you can simply use some plant milk. This also ensures a beautiful, golden brown color and a crispy surface. If you ever have some leftover (which rarely happens!), you can store the puff pastry in an airtight container. They stay fresh for one to two days and can simply be baked in the oven if necessary to become really crispy again. So you always have a delicious, quick treat on hand.

Strawberry puff pastry recipe
15 minutes prep time, 25 minutes prep time
Ingredients
1 roll of puff pastry from the refrigerated shelf
100g strawberries
3 tbsp Strawberry jam*
1 tsp powdered sugar*
1 egg yolk or plant-based milk
preparation
- Wash strawberries, destem them and cut them into small pieces.
- Cut the puff pastry into 6 pieces, spread half of each with jam and distribute strawberry pieces on top.
- Cut the second half vertically several times.
- Roll up the side with the jam halfway and simply place the cut strips on top.
- Shape into croissants, place on a baking tray and brush with a beaten egg yolk or a little plant-based milk.
- Bake at approx. 180 degrees for 20-25 minutes until golden brown.
- Sprinkle with powdered sugar and enjoy.

- 1 role Puff pastry
