Ingredients
- 300 g of jabuticaba
- 1 cup of water
- 1 clove of garlic
- 2 tablespoons brown sugar or cane syrup or honey
- 1/2 lemon (zest)
- 2 white fish fillets (tilapia or hake, for example)
- Fresh thyme to taste
- Salt to taste
- Pepper to taste
Preparation
- Jabuticaba sauce
- Place the jabuticabas to cook in the water.
- After it starts to boil, count 5 minutes and turn off the heat.
- Blend in a blender and sift.
- Sauté the garlic with the thyme.
- Add the jabuticaba broth and add salt and pepper.
- Add the sugarcane molasses and let it reduce.
- Turn off the heat and add the lemon zest.
- Fish
- Season the fish with salt and ground pepper.
- Grill in olive oil or butter (1 teaspoon is enough for grilling).
- Serve with jabuticaba sauce.
