Either because the meat becomes stringy after a while, or because the flavor risks being monotonous, but boiled meat, let’s face it, no matter how good it may be – sometimes – it becomes a challenge to dispose of. A tasty mix of ingredients common to many traditional dishes of the region, such as garlic, anchovies and parsley, the true protagonist of the recipe, make the green bagnetthat is, green sauce, the perfect partnership between a recipe that has now lost its flavor and the perfect condiment to bring it back into vogue… or rather, make it special once again!
