Method: Hilsa must be raw. Add fish, a pinch of turmeric, salt, a pinch of green chillies and some oil to the pan. All should be done by hand, not spooned. Wash the water of that hand and put it in the kadai like a fish dip. Byas, kella phate, when it boils, hand washed water hilsa is ready.

Hilsa fish must be fresh. Kalojire can be given at will.
