“Eggplants stuffed with walnuts and tomatoes”

Spicy, aromatic, beautiful, filling, incredibly delicious.
Eggplant with walnuts is an incredibly appetizing snack that includes a minimal set of products.
INGREDIENTS:
✅Eggplant – 1 pc.
✅Vegetable oil 30-50 grams.
✅Salt, black pepper to taste
✅Walnuts 50 grams
✅Garlic -1 clove
✅Tomato 1 pc.
✅ Greens (dill) 20 grams
✅To decorate the dish: bell pepper and almonds.
PREPARATION:
Prepare the eggplant. Choose a firm and smooth fruit that does not give way when pressed. Instead of one large eggplant, you can take two medium ones.
Wash the eggplant, dry it and cut it lengthwise into thin slices.
Salt the resulting slices and leave for 15 minutes. Then gently squeeze the eggplants to remove excess moisture. I did not rinse the eggplants from salt, since the filling was not very salty.
Heat vegetable oil in a frying pan over medium heat and fry the eggplants on both sides until golden brown.
Place the finished eggplants on a plate and cool.
Prepare the ingredients for the filling.
Peel the garlic. You can cut the clove into several pieces.
Place walnuts, garlic and dill in a blender bowl. Pour in water, add salt and pepper to taste. Blend everything until you get a thick paste. It can be more or less uniform.
Place 1 tablespoon of nut filling on each eggplant slice.
Decorate with tomato on top.
The eggplants with walnuts are ready. Place on a plate and garnish with almonds and bell peppers.
