Ingredients:

  • 4 pieces of Hilsa (Ilish) fish
  • 4 tablespoons mustard paste (or 2 tablespoons mustard powder mixed with water)
  • 2 tablespoons grated coconut
  • 4 tablespoons yogurt
  • 4 green chilies (slit)
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 4 tablespoons mustard oil
  • Banana leaves (cut into squares large enough to wrap the fish pieces)
  • Thread or toothpicks (to secure the banana leaf parcels)

Instructions:

  1. Prepare the Marinade: In a bowl, mix mustard paste, grated coconut, yogurt, turmeric powder, salt, and 2 tablespoons of mustard oil. Blend well to form a smooth paste.

  2. Marinate the Fish: Coat the Hilsa fish pieces with the prepared mustard paste. Ensure the fish pieces are well covered. Let it marinate for at least 30 minutes.

  3. Prepare the Banana Leaves: Lightly roast the banana leaves over a low flame to make them pliable. This will prevent them from tearing while wrapping the fish.

  4. Wrap the Fish: Place each marinated fish piece in the center of a banana leaf square. Add a slit green chili on top and drizzle with a little mustard oil. Fold the banana leaf over the fish to make a neat parcel. Secure the parcel with a thread or toothpicks.

  5. Steam the Fish: Place the wrapped fish parcels in a steamer. Steam for about 15-20 minutes until the fish is cooked through.

  6. Serve: Carefully unwrap the parcels and serve the Ilish Paturi hot with steamed rice.

Conclusion

Ilish Paturi is a true gem of Bengali cuisine, bringing together the aromatic flavors of mustard, the richness of Hilsa fish, and the delicate aroma of banana leaves. This recipe is perfect for special occasions or to treat your family to an authentic Bengali meal. Enjoy the delightful taste of Ilish Paturi with a side of steamed rice and experience the rich culinary heritage of Bengal in every bite.
