I’ll tell you what they are and how to make my own pasta with gorgonzola sauce here in the best recipe with chicken, tomatoes and pine nuts.

I really like Gorgonzola. The Italian blue cheese is really unique and intense in taste. But I don’t just love it as a sauce for pasta dishes or with mine Pork fillet with Gorgonzola. But also as a topping like mine here Summer salad with strawberries and gorgonzola.

My gorgonzola cream sauce today comes with tomatoes and chicken. A really tasty combination of ingredients. And the best thing about it: The dish can be prepared and ready in just 25 minutes.

These 4 ingredients go into my gorgonzola sauce

The creamy sauce is really easy to make and can be varied again and again with different ingredients. For today’s pasta with gorgonzola sauce is still coming Chicken, tomatoes, rocket and pine nuts in addition. The sauce base always remains the same and is made from these ingredients:

  • Gorgonzola: A mild one goes into my sauce Gorgonzola Dolce. It has a slightly creamier taste than the intense one Gorgonzola picante. Gorgonzola dolce is great for sauces. You can always get good cheese directly at the cheese counter.
  • Cream: I use cooking cream for my recipe. You can also replace the cream with milk.
  • White wine: I refined the sauce with a dash of white wine. You can also swap it for my homemade vegetable broth if children eat with you or you don’t want to drink alcohol.
  • Herbs and spices: Thanks to the spicy Gorgonzola, you only need to season the sauce sparingly. I use salt, pepper and fresh parsley.

My pasta with gorgonzola sauce is easy to prepare and perfect if you’re looking for a real comfort food. The dish is on the table in just 4 steps:

  1. Cook pasta: I put the noodles on first. Because while these are cooking, there is enough time to prepare the sauce.
  2. Prepare ingredients: For the sauce, I roast the pine nuts in a pan without any fat. All that’s left is tomatoes, chicken and gorgonzola, which are cut into pieces.
  3. Fry chicken: Before the sauce is prepared, the chicken pieces must first be fried so that they become nice and crispy on the outside.
  4. Prepare sauce: In the same pan in which the chicken was fried, add the remaining ingredients. In other words: let the tomatoes steam briefly and then add the cream with Gorgonzola. The cheese should melt while stirring. Finally, season the sauce with white wine, salt, pepper and fresh parsley. Then put the chicken back in the pan and serve with the noodles.

I always add some arugula to the plates. It just goes great with the spicy cheese.

  • Prepare the pasta according to the package instructions and roast the pine nuts in a pan without any fat. Quarter tomatoes. Cut the chicken breast fillet into bite-sized pieces. Cut the Gorgonzola into small pieces.

  • Heat oil in a pan and fry the chicken, season with salt and pepper. Then remove from the pan.

  • Add the tomatoes to the frying fat and sauté briefly. Add the cream and Gorgonzola and let the cheese melt while stirring. Season with white wine and season the sauce with salt, pepper and fresh parsley. Return chicken to pan.

  • Serve the pasta with the Gorgonzola cream sauce and pine nuts. Optionally with arugula.
