My Oven vegetables with chicken It’s a very simple sheet pan dish with colorful vegetables and tender chicken. The recipe can be prepared in 15 minutes and is simply perfect for your healthy lunch break.

Simple oven baked vegetables with chicken

My wonderfully colorful oven-roasted vegetables with chicken are packed with red and yellow paprika, zucchinired Onions and delicate chicken meat. There is also a wonderful marinade made from olive oil, lemon juice, basil and oregano and of course: feta cheese.

You can combine the side dishes for my oven vegetables with chicken as desired: I like quinoa, rice and homemade tzatziki with vegetables.

The nice thing about oven dishes is that the preparation is usually quite simple and quick: put everything on the tray, put it in the oven and you’re done! And because a whole baking tray is of course quite a lot, the whole thing is also perfect for meal prepping.

Oven vegetables with chicken in 3 steps

Step 1

First, cut the chicken breast fillet into bite-sized pieces. Then chop the peppers and zucchini into small pieces and chop the onion into eighths. Put everything together on a tray.

Step 2

To make the marinade, stir together olive oil, lemon juice, minced garlic, oregano, basil, salt and pepper in a small bowl.

Step 3

Mix the marinade with vegetables and chicken and bake everything for 20 minutes. Then serve with feta and homemade tzatziki.

The Greek-spiced vegetables from the tray are not only very healthy and filling, they are also ideal for the lunch box and taste good both warm and cold. The oven-roasted vegetables with chicken will keep in the fridge for up to three days.

Ingredients for the marinade

  • Preheat the oven to 200 degrees top and bottom heat.

  • Cut the chicken breast fillet into bite-sized pieces. Cut the peppers and zucchini into small pieces and chop the onion into eighths. Put everything together on a baking tray lined with baking paper.

  • Chop the garlic finely. Mix olive oil, lemon juice, garlic, oregano, basil, salt and pepper into a marinade and mix with vegetables and chicken. Bake for 20 minutes.

  • Remove and serve with feta.

If you eat the chicken and vegetables plain, there is enough for 2 people. If you combine the dish with rice or quinoa, it will feed 4 people.
Shelf life in the refrigerator: about 3 days.
