“This cake is heaven!” Here is the famous expression of a noblewoman who gave her name to the paradise cake of the same name made by Enrico Vigoni, a 19th century pastry chef from Pavia. This dessert became the symbol of the city of Pavia and is a classic of Italian pastry making. So we asked one of the most important Italian Pastry Chefs, Sal de Riso, to prepare it for us, or rather… for you! A mix of genuine and quality ingredients such as fresh eggs, untreated lemons and oranges together with Bourbon vanilla pod, give life to a soft and fragrant base, with an unmistakable taste and sweetness. The golden rules for a fabulous paradise cake? Work all the ingredients at the same temperature and alternate the pouring between dry and liquid mixtures to mix, for a perfect dough after cooking, neither too soft nor too compact. Ideal to be enjoyed alone for a “heavenly” breakfast with a generous sprinkling of icing sugar, it becomes a “divine” dessert with a layer of cream and a topping of whipped cream, like our version of the lemon paradise cake.
