Pasta all’amatriciana, the easy and creamy vegan version

For those who follow a plant-based diet but don’t want to give up the typical flavors of Roman traditionthe part of the market that makes vegan cuisine its core business has thought of everything. Thanks to the introduction of valid alternatives to products of animal originusually based on soy and natural flavourings, the most common dishes of Italian gastronomic culture (and not only!) have become accessible to everyone.
In this wake, many restaurants have managed to adapt their offer to the requests of those who have chosen to approach the world of plant-based dietsmany others, however, have based their business strategy on this type of nutrition with notable success.
In the case of one of the most famous dishes of the capital, amatriciana, a few sticks of vegan bacon and a sprinkled with grated cheese vegetable to transform this pasta into a delicious first course that has nothing to envy of the original recipe.

Whoever said that amatriciana can only be made with bacon and pecorino has never tasted theirs vegan version, a riot of flavors capable of making even veterans of traditions agree.
Here is the easy recipe and ready in 10 minutes!

In a pan, let the vegan bacon fry with a drizzle of oil and fresh chilli. We add some white wine and, when the alcohol has been partially absorbed, we add the peeled tomatoes which we crush with the help of a fork; add salt and, if necessary, a pinch of sugar and eliminate the chilli pepper which will have flavored our sauce.
Cook the pasta in abundant salted water and drain well al dente; we finish cooking directly in the pan with the seasoning, adding a ladle of cooking water. Let’s cook for a few minutes, being careful not to overcook the pasta, and serve while still hot and creamy with a few cubes of bacon and a sprinkling of grated vegetable.
