But the name pizza was recorded in manuscript for the first time only on the 10ththe century AD in the small town of Gaeta in the area of Naples. On the 16ththe century and with the introduction of the tomato to Europe, pizza begins to take on the shape and taste we know today as its sauce is placed for the first time. Until then, pizza only contained cheese, garlic, salt and lard.
But an important moment in the history of pizza was in 19the century and specifically in 1882 with the visit of Queen Margarita to Naples. Then she ordered that she be served the food that the people loved to eat as pizza was considered a poor man’s food. So the Italian chef and famous pizzaiolo of the time, Raphael Esposito, wanting to honor the queen, made a tricolore pizza, i.e. three-colored, inspired by the Italian flag. Top with red tomato sauce, green basil and white mozzarella. Queen Margherita was so delighted with its taste that in her honor this recipe was named Pizza Margherita, a name that has been preserved to this day.
With the mass immigration of Italians at the beginning of the 20th centuryu century on the American continent, the pizza recipe spread to the other side of the Atlantic. Its fame is spreading around the world and it is so loved that just in 2017 the global pizza market recorded over 128 billion dollars in the US alone.
