Step by step to potato casserole

This variant is not made with potato pieces, but with mashed potatoes. The fluffy casserole is particularly popular with children.

  • Cook unpeeled potatoes in boiling salted water. Drain and peel while still warm. First rub a baking dish with a halved clove of garlic, then with a little butter.
  • Cut two of the potatoes into slices and line the dish with them. Spread with crème fraîche and spread marjoram leaves over it. Grate Gouda and Parmesan.
  • Separate eggs. Mash the remaining (still warm) potatoes, mix with milk, egg yolk, Gouda and a little Parmesan. Season with salt, pepper and nutmeg. Beat the egg whites with a pinch of salt until stiff and fold into the potato mixture.
  • Spread the mixture in the baking dish and sprinkle with the remaining Parmesan. Bake in the preheated oven. Remove the potato casserole from the oven and serve with salad.

What goes well with potato casserole?

Traditionally, potato casserole is served as a side dish with fish, meat or vegetarian meat substitutes such as tofu or seitan. But potato casseroles can also occasionally be served as a single main dish. Then a crisp salad tastes best with it.

Which potatoes for potato casserole?

Waxy potato varieties such as are best suited Linda or Belana for the potato casserole, because with these varieties the meat remains firmly structured after cooking and thus ensures a beautiful fanned look and the right bite. Salt, pepper and nutmeg contribute to the perfect seasoning. Potato casseroles are available in different recipe variations: classic with egg-milk or egg-cream, British with mashed potatoes (Shepherd’s Pie) or Mediterranean with delicate béchamel sauce.
