My simple one Potato soup with sausages is a quick soup from grandma’s kitchen and real home cooking. The classic recipe with Vienna sausages, lots of vegetables and potatoes is quick and easy to make, super creamy and guaranteed to make the whole family full and happy.

Grandma’s potato soup with sausages

My super simple potato soup with sausages is a real classic. You only need a few ingredients for the recipe and apart from the chopping, the preparation is really quick.

Come next to my soup potatoes another covenant Soup vegetables, Vienna sausages, vegetable broth and Parsley. A dollop of cream gives the potato soup a nice, creamy touch.

This is how it works even faster: For the soup, you can also use soup vegetables from the freezer instead of fresh soup vegetables. And instead of fresh parsley, you can also use the frozen version.

Step 1

First, chop the potatoes and soup vegetables into small pieces. Then fry the potatoes and vegetables in a large pot with a little butter. Then everything is poured with vegetable broth and brought to the boil. The soup can now simmer for 30 minutes.

Step 2

In the meantime, you can chop the parsley finely and slice the Vienna sausages. Everything now goes into the soup together with the cream. Simmer for another 5 minutes and season with salt, pepper and nutmeg.

When I eat, I like to put small bowls with all kinds of toppings on the table. Everyone can then refine their soup with their favorite ingredients. I particularly like fresh herbs in the soup, but crispy fried bacon cubes and croutons also make for perfect soup enjoyment.

  • Peel the potatoes and cut them into small cubes. Cut soup vegetables into small pieces.

  • Heat the butter in a large pot, then sauté the potatoes and vegetables for 5 minutes while stirring. Add vegetable broth and bring to the boil. Let simmer for 30 minutes.

  • Cut the sausages into slices and add them to the soup along with the cream. Let simmer for 5 minutes. Fold in the parsley and season the soup with salt, pepper, marjoram and nutmeg.

It goes well with fried bacon cubes, croutons and fresh parsley.
