The rice salad with 4 tomatoes is a fresh and easy to prepare first course, perfect for the summer. Choosing among the many varieties of tomatoes that exist was not easy, but we trusted our taste and opted for 2 varieties of datterini tomatoes, red and yellow, our beloved pachino tomatoes and the camone tomato, a Sardinian variety with a scent and intense flavour. The quickly sautéed tomatoes will give this dish all their sweetness and at the same time a touch of acidity, for a taste that never tires! To decorate the dish we added some pieces of fresh cheese, which will give creaminess and lots of aromatic herbs and lime zest for a truly unique aroma! A perfect fresh salad to enjoy at any time and in any place!
4-tomato rice salad
We recommend adding the robiola only at the end to prevent the salad from becoming too compact and the rice grains from sticking together.
Oregano and basil can be replaced with marjoram and thyme.
Lime zest can be replaced with lemon zest.
Fresh cheese can be replaced with cubes of feta orquartirole.
