Preparation

We have taken care to thaw them.

First remove the heads and shells from the shrimp.

Remove the gut from the spine by slightly tearing the surface and pulling the gut.

Dry them well on absorbent paper.

Marinating

Chop the garlic in a bowl, add the pepper, paprika and olive oil.

Grind a lot of pepper and add the shrimps.

Mix, cover and leave in the fridge for 10′.

However, we boil the shells in a pot for 15´.

Strain and keep the broth aside.

Boil the pasta in salted water for 2 minutes less than indicated on the package.

The sauce

Heat a pan over medium-high heat.

Add the shrimps and saute for 2-3′, add some broth to half cover them and let it boil.

With tongs and as they drip, throw in the linguini and mix the pasta in circular motions.

Take the pan off the heat.

Finally, we add 3 tbsp. our homemade pesto sauce and mix well.

Serve immediately and garnish with fresh basil leaves and grated parmesan.
