Ingredients
- 3 Italian tomatoes or a large heirloom tomato, seeded and diced
Vinaigrette
- 1/2 French shallot, finely chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp. chopped basil
- 1 tbsp. chopped parsley
- pepper and salt to taste
Instructions
- Place the tomatoes in a small serving bowl.
- Add the vinaigrette (amount to taste) and mix gently.
- Enjoy with a sliced ​​and toasted baguette* or with crackers.
