When you buy really good meat, you can go a long way with few spices – salt and pepper are often all you need. But when you want to vary and flavor with something else, here is a little guide on how you can think about flavoring. We have selected safe cards, seasonings that always work for each type of meat.
Another tip is to invest in a thermometer to be able to check that your meat is cooked through. This is more important when grilling pork and chicken than beef, but a clear advantage even there. If you want to read more about internal temperatures, take a look here!

No meat is as easy to vary as chicken! Try the combination of lemon, garlic and herbs such as thyme and rosemary – it’s incredibly tasty!

Pork often tastes a little fatter than beef and chicken. A rub on ground ginger, cayenne pepper, onion powder, a little cane sugar, garlic powder and mustard powder is a good alternative, but the best is this marinade:
For about 800 g of meat
- 1 dl liquid honey
- 2 tbsp Japanese soy
- 1 tsp Sambal Oelek
- 2 finely chopped garlic
- 1 tablespoon finely chopped fresh rosemary
- 1 tsp salt
- 1/2 dl rapeseed oil
- 2 crm black pepper

Generally when it comes to beef, salt and pepper is enough. Some argue that it is a waste of fine meat as it is so good in itself. Invest in the accessories instead – here a good salad and sauce adds more than a marinade or rub.
