Sweet and sour pork

One of the fundamental criteria of Chinese cuisine it is the harmonious balance of colors, flavors and textures. Sweet and sour pork is a traditional recipe that perfectly represents this characteristic, starting from the choice of ingredients: the green of the peppers, the red of the tomato and the yellow of the pineapple, a brightly colored mix which, together with the sweet and sour sauce, gives the dish its unmistakable taste. After frying the pieces of meat, it is also very important to maintain their crunchiness even during the final cooking phase together with the vegetables and sauce… do you want to know how to do it? To make sweet and sour pork, first cut the meat into cubes of about 1.5 cm 1. Rinse it under running water 2 and transfer it to a bowl, then season with salt 3 and pepper.

Add the rice wine 4 and half a beaten egg 5mix well and leave to marinate while you continue with the recipe 6.

Move on to preparing the batter: in a bowl combine the flour with the starch 7 and yeast 8then gradually pour in the water while stirring with chopsticks 9.

Continue mixing until you obtain a homogeneous consistency 10then let it rest for 10 minutes. In the meantime, peel and cut the green pepper into cubes of the same size 11 than the tomato 12.

Do the same thing with the pineapple slices in syrup 13. Once the resting time has elapsed, pour the batter into the bowl with the marinated meat 14 and mix well so as to cover the cubes evenly 15.

Heat the wok for about a minute before adding the seed oil to bring it to a temperature of 180°. Fry the battered meat cubes for about 5-7 minutes, moving them gently to prevent them from sticking together 16. Once golden 17drain and transfer to absorbent paper 18.

At this point prepare the sweet and sour sauce: bring the water to the boil in a wok or saucepan, then add the sugar 19tomato paste 20 and vinegar 21. Mix and bring back to the boil.

In the meantime, pour the starch and water into a separate bowl 22mix well and pour the mixture obtained into the sauce, little by little 23. Continue mixing with the whisk for a few minutes 24.

Take the wok in which you cooked the pork, washed and dried it, and heat a spoonful of seed oil. Add the pepper 25 and the tomato 26 and sauté them for a minute, then add the pineapple 27.

Pour in the sweet and sour sauce 28 and mix well 29then add the fried meat cubes 30.

Sauté everything for about 30 seconds 31 and finally season with a spoonful of seed oil 32. Your sweet and sour pork is ready to be served 33!
