  1. Peel the sweet potatoes and cut them into thin sticks. Place on a baking tray lined with baking paper and drizzle with oil. Salt. Mix well and spread the sweet potato fries on the baking sheet, spaced apart from each other.

  2. Bake the sweet potatoes at 200 degrees in a preheated oven for about 20 minutes until they are crispy. Remove from oven and serve immediately.

Tip For even more spice, you can also sprinkle the fries with paprika, pepper or rosemary.

How do sweet potato fries get crispy?

Place the sliced ​​sweet potatoes in for about 30 minutes Water. This removes starch from the potatoes, making them crispier when baked. Then pat the fries dry and continue as described in the recipe.

2. Soak raw sweet potato fries in water for at least an hour.

3. Remove from the water and dry with kitchen paper.

4. Place in a freezer bag with starch (about 1 tablespoon per sweet potato) and shake until the fries are evenly coated.

5. For about 5 minutes at 130 degrees Put them in the deep fryer (important: not too many per frying cycle, the sweet potato fries must float freely in the fat).

6. Carefully remove from the fat and let cool on kitchen paper for 10-15 minutes.

Can sweet potato fries be made ahead?

Sweet potato fries are easy to prepare: Peel the potatoes and cut them into sticks as described in the recipe. You can store the prepared sweet potato sticks in an airtight container in the refrigerator for up to three days before baking them as described.

Alternatively, the prepared sticks can also be frozen: place them on a baking tray at a distance from each other. Freeze the sweet potato sticks on the tray in the freezer for 2 hours. You can then transfer them to a suitable container, freeze them again and store them for up to six months.
