The delicious recipe for baked mashed potatoes
When they arrive on the table it is always a celebration, especially for the little ones. These are baked potatoes, a Sunday must for every Italian!
And to think that, as soon as she arrived on our continent, in the 9th centurywas not welcomed as one would expect, so much so that it established itself with extreme difficulty in the eating habits of Europeans. It was above all the aristocrats who showed a certain distrust towards this tuber, after all its origin did not bode well: a food that grows underground and has a similar flavor to another famous poor foodthe chestnut.
Result? High society rejected the potato and it was destined for consumption by soldiers and prisoners. It was only thanks to a French court pharmacistwhich imposed the use of the tuber in all its variants, if the potato had its social redemption even among the richest, thus giving rise to a chain reaction in Italy too.
There is no Sunday without baked potatoes, but above all there is no chef who doesn’t know how to cook them. Versatile and delicate, potatoes lend themselves to numerous preparations which make this dish suitable for all types of palates.
A delicious recipe? Try them with a sprinkling of parmesan, crunchy on the outside and soft on the inside… you won’t be able to resist!
Let’s start by rinsing the potatoes under cold running water. Place them in a pan with plenty of boiling salted water and let them cook for about 25/30 minutes, until they are soft when tested with a fork. Drain and let cool for 15 minutes, then place them in a container together with the oil, a pinch of salt, rosemary and some spices of your liking (in this case paprika, pepper and oregano were used) and mix.
Place the potatoes, still in their skin, on a greased baking tray and mash with the help of the bottom of a glass, then cook in the oven for 25 minutes at 220°C. We turn the potatoes, add the parmesan on both sides and cook for another 10 minutes or so, at least until they are crispy.
Try them also in the vegan version without parmesan!
