The delicious recipe for creamy lemon pasta

As always, the Italian gastronomic tradition proves to be full of stories to tell and curious and original ideas to bring to the table. Like that of lemon, citrus dal unmistakable scent which evokes the freshness of fruit trees and the typical colors of southern Italy.

Although the credit for having introduced the use of lemons into Italian and Spanish tables was attributed to the Arabs, around the year 1000, the first official tracks of this citrus fruit seem to date back even 100 or 200 years earlier. Paintings found in the houses of the orchard of Pompeii testify to the presence of this fruit, even then, in Neapolitan land.

And that’s exactly where it comes fromthe most famous pasta and requested on the Amalfi coast: spaghetti (or linguine) with lemon!
The Amalfinati, thanks to the large production of lemons with a shape similar to citron which they have been able to exploit in an exemplary way, have created a dish as simple as it is goodnow famous throughout the country and present in all tourist guides.

Lemon pasta is a very simple, quick and economical dish.

Enough very few ingredients to prepare it to perfection and bring a delicate and fresh first course to the table.
Make it creamier by adding cream for a mouth-watering result!

Brown the garlic over medium-low heat in a pan with extra virgin olive oil and leave to flavor for a few minutes.

Add the juice of a lemon and tone down the acidity by cooking for two or three minutes; then add the cream, the grated lemon zest, a sprinkling of parsley and season with salt.

Cook the pasta in plenty of salted water and drain well al dente, finally transfer it to the pan with the seasoning and a drop of cooking water and stir for a minute.

Plate up, garnish with some parsley and serve your hot and creamy lemon linguine!
