Put the soft butter with the granulated sugar in the mixer bowl.

Beat with the wire to foam and hang the ingredients for a few minutes.

After the sugar has melted and the mixture has thickened, add the cinnamon, cloves, vanilla and orange zest.

Add the yolks one by one. They have to drink the mixture each time before we add the next yolk.

With a hand mixer in a deep bowl, beat the egg whites with the salt on medium speed until the meringue forms soft peaks (about 2-3 minutes). Keep the meringue aside for a while.

Reduce the speed of the mixer to 1.

Dissolve the baking soda in the juice and add them to the mixture.

Alternately, add the sifted flour with the milk and cognac.

We start with flour and finish the beating with flour.

Add the coarsely chopped walnuts.

Gradually add the meringue and gently fold the mixture with a soft spatula so as not to lose its volume.

Pour the mixture into the pan. Add the flour.

Bake for 55′ and 1 hour. To make sure it’s cooked, insert a knife into the center. If the dough blade comes out dry, then it is ready.

Let it stand in the pan for 15 minutes and cool slightly.

Turn it over on a large plate.

Remove the non-stick paper and let it cool completely.

Sprinkle with powdered sugar. If you want to write wishes on the king cake, make an easy frosting.
