Watermelon pie without sugar
The Cycladic watermelon pie and the Loli pumpkin pie of Sifnos are very popular recipes in the Aegean islands and especially in the Cyclades.
For the watermelon pie I don’t use any sugar since my watermelon is sweet and delicious. A little bit of honey just accentuates the sweetness of the watermelon without masking its cool taste.
The watermelon should be crisp and crimson. Be careful not to be sugared with soft flesh.
Weigh the watermelon after cleaning it from the skin. It’s about 3 slices.
Clean the flesh of the watermelon from the seeds with your hands.
At the same time we break it into small pieces.
Put the watermelon and its juice in a bowl.
Add the honey, cinnamon and oat flour.
Mix the ingredients with a spoon.
We now have a pink porridge with small pieces of watermelon.
In a small pan 22x30cm. add half the olive oil and sprinkle with half the sesame seeds.
Empty the mixture and level the surface.
Pour over the remaining olive oil and sprinkle with the remaining sesame seeds.
Bake the watermelon pie in a well preheated oven at 180ºC in the air until it turns brown all over and has a crispy surface for about 1 hour.
Let it cool completely and cut it into pieces. If you want more sweetness, sprinkle with a little honey or sprinkle with a little powdered sugar.
