- Washed urad dal (washed urad dal/white urad dal) – As the name suggests, it is the skinless form of black urad dal. It has a smooth texture, making it ideal for dishes like dal fry, tadka dal and soups.
- Whole washed urad dal (white urad dal/yellow urad dal) – It is also called white urad dal or yellow urad dal. Its color is creamy white and its taste is mild. White urad dal is mainly used in making South Indian dishes like vada, dosa and idli.
