The history of onion cake
Onion cake recipes have a permanent place in German cuisine, especially in autumn. It originally comes from the wine-growing regions along the Rhine and in southern Germany. It used to be a simple farmer’s dish that was served with a new wine, “Federweißen”. Today many people love it and there are countless regional variations. Whether interpreted in a classic or modern way – onion cake is simply a pleasure that you shouldn’t miss!
Onions – A real superfood
Onions are not only flavorful, but also real powerhouses for health. They are full of vitamins and antioxidants and even have an anti-inflammatory effect. The substances contained in onions such as quercetin strengthen the immune system and promote heart health. Gentle sautéing preserves many of these valuable ingredients, making the onion cake not only delicious but also healthy.
Onion cake recipe
Ingredients
½ cube of yeast
150 ml lukewarm milk
1 level teaspoon sugar
250g Flour*
1 level tsp Sea- or Rock salt*
50g butter
500g onions
50g butter
1 tbsp flour
2 eggs
100 ml cream

preparation
- Crumble the yeast in a small bowl and dissolve it in some of the warmed milk. Add sugar and a little flour and stir until smooth. Sprinkle with a little flour and let it rise, covered, in a warm place for about 30 minutes. If the volume of the pre-dough has doubled, then it has risen sufficiently.
- Add the remaining flour, salt and the remaining milk and knead a dough. Then add the very soft butter. Let the kneaded dough rise for another 30 minutes. Line a greased mold with it.
- For the topping, peel and dice the onions and fry them in the butter while stirring until translucent, about 10 minutes. The onions should not brown. Then stir in the flour straight away and let the mixture cool down. Whisk the eggs and add the cream and stir well. Season with salt.
- Pour the onion mixture onto the dough and sprinkle with the smoked ham. Finally add a few flakes of butter on top.
- Bake on the middle rack in a preheated oven at 200 °C top/bottom heat for approx. 35 – 45 minutes.
- Served warm, it is particularly delicious!
