Almond paste is a traditional Chinese dessert. The smell of almonds is refreshing, not too sweet when eaten, and has a moisturizing effect. Christian made a new version of almond paste this time, adding egg whites and using large Australian almonds. The effect is very satisfying.

In his spare time, Dad likes to take Kristine to the candy shop to taste it. I have loved eating almond paste since I was a child. Because almond paste has a strong aroma, just like celery and coriander, some people love it and some people are afraid of it.

The Hong Kong version uses southern apricots and a little northern apricots. This time, Christine used large almonds bought in Australia. The smell was not the strong almond smell that she was used to before, but it was clear and slightly sweet. Another flavor twist. Family members who don’t like strong aromas were happy to eat a bowl.

You may wish to add almonds to your diet as they contain high nutritional value. Almonds are considered a healthy food. It contains a lot of unsaturated fat, which is very beneficial to human health. So Christine made some almond paste as a snack. Smooth, sweet, and very refreshing.

Material:

  • 1 measuring cup of almonds, about 150 grams
  • 800ml water + additional soaking water
  • 40g white rice
  • 40g rock sugar
  • 1 egg white

 

Almond Dessert Procedures

  1. Soak the almonds in water overnight. If the weather is hot, put it in the refrigerator. Soak white rice in water for 1 hour. spare. Bring 800 ml of water to a boil, then cool until not hot and set aside.
  2. Take the almonds out of the refrigerator and pour out the soaking water. Rinse again and peel off the coat.
  3. Put the almonds, rice and water together in a food blender and beat until fine. Sieve to separate the residue.
  4. Pour into a small pot. Cook over medium heat for 15 minutes, stirring as you cook. Add rock sugar and cook until completely dissolved. Remove from heat, stir in egg whites, and serve. Serve hot. It can also be eaten refrigerated as a delicious summer dessert.

Kind tips:

  • The amount of white rice will affect the texture of the almond paste. Can be increased or decreased according to personal taste.
  • The amount of sugar can also be increased or decreased.
