Ingredients:
- 1 dragon fruit
- 1 cup rice
- 1 onion, sliced
- 1 potato, diced
- 1/2 cup broccoli florets
- 1/2 cup carrots, diced
- 200g shrimps, peeled and deveined
- Water, as needed
- Chinese curry spices or your favorite spices, to taste
- Salt, to taste
- Oil, for frying
Instructions:
Prepare the Rice:
- Peel and mash the dragon fruit in a bowl.
- Rinse the rice until the water runs clear.
- Combine the mashed dragon fruit with the rice in a rice cooker.
- Add the appropriate amount of water (usually 1:1 ratio with rice).
- Cook according to the rice cooker’s instructions.
Cook the Shrimps and Vegetables:
- Heat oil in a saucepan over medium heat.
- Add the sliced onions and fry until they become translucent.
- Add the diced potatoes, broccoli, and carrots to the saucepan.
- Stir-fry the vegetables for about 5 minutes or until they start to soften.
- Add the shrimps to the saucepan and cook until they turn pink and are cooked through.
- Pour in enough water to create a sauce, but not too much as to make it soupy.
- Season with Chinese curry spices or your favorite spices, and salt to taste.
- Simmer everything together for another 5-10 minutes, allowing the flavors to meld.
Serve:
- Fluff the dragon fruit rice with a fork and serve it on a plate.
- Top the rice with the shrimp and vegetable mixture.
