Recipe for easy Pancakes with melting cheeses, bacon and an easy homemade dough which is easily opened by Giorgos Zolis for dinner or to accompany our lunch. Without much oil and with a crispy sheet.
Ham casserole with tortillas
My mother is very good at making pies and my father often asks for them. Among our favorites are the pancake pies that she makes sometimes with feta and sometimes with ham and cheese.
Now that I’m away, I found a recipe that will fill its void, from our beloved Giorgos Zolis. Easy bacon and cheese pancakes worth trying.

Execution for the Bacon and Cheese Pancakes
Add the all-purpose flour, lemon juice, salt and olive oil to a bowl. We begin to slowly add the warm water while working the mixture with our hand at the same time.
Knead until you get a very soft dough that sticks to your hands and then oil it very well with olive oil. Let the dough rest for 20 minutes. We flour our counter and transfer the dough there.
Knead it for 1 minute and divide it into 6 equal balls. Open each ball into a leaf with the rolling pin. Put some chopped bacon and some cheese mix on one side of the leaf and close it in an envelope.
Cheesecakes in the pan (pancakes). Yummy!
Seal the edges well and repeat the same process with the rest of the dough balls. Place each pie on a piece of parchment paper and put the seed oil in the pan, on a medium heat.
As soon as the oil burns, fry the pancakes on medium heat until they get colored on both sides. We put them on a tray with kitchen paper to drain the excess oil and they are ready.
