The divine taste of apple pie without all the effort? This is possible by making a rustic apple piemy version of which is twisted here with a fruit that I love, the grenade. It’s the touch of crunch and acidity that brings a little pep to this sweet and fragrant tart. Serve with vanilla ice cream!

That’s it, Quebec Autumn is finally here and is even beginning its final turn before gradually giving way to the cooler days of Winter. While we have brought out coats, scarves and hats for the coldest (in other words, hats for my French friends), the apple, pear and pumpkin picking season is in full swing until the end of the month. October here and calling for all kinds of comforting recipes!

The fall outing in the orchard is even an important family tradition here and I must say that it is an outing that I never tire of doing every year. Nothing beats the pleasure of tasting what you have picked yourself, right?

This rustic apple and pomegranate pie recipe is so quick and easy to prepare that you won’t believe it! The secret of this tart lies above all in a good homemade dough and good apples. And I would say that’s really it!

Ingredients for rustic apple and pomegranate pie

  • All-purpose white flour : for a good homemade shortcrust pastry, as for my recipes in general, I favor unbleached and organic white flour (I recommend that of Moulin Lacoste, located near Quebec, which I find online at Lufa). For a low GI pie crust, you can make your shortcrust pastry with hulled barley flour and for an even more rustic result, do not hesitate to mix white flour and wholemeal flour.
  • Butter : it can sometimes be difficult to find good butter in Quebec and Canada. For my part, I use, when possible, the unsalted butter from the Chagnon dairy which I find in grocery stores but also on Lufa. By far the best butter I have tasted here to date!
  • Almond powder or almond flour : almond powder is really very useful for making good soft desserts (the only difference with flour is the fineness of the grind).
  • Apples : you can of course use any variety of apples! For my part, I like Honeycrisp, McIntosh or even Spartan when baking and in France, Reine des Reinettes, Pink Lady and Braeburn are my favorites for apple-based desserts!
  • Grenade : fresh or frozen, the pomegranate will bring a little tangy crunch to your pie;
  • Brown sugar : for shortcrust pastry but also to lightly sweeten your apples if necessary: ​​For a low GI recipe, you can use coconut sugar.
  • Sliced ​​almonds or flaked almonds : the final decorative touch which will add crunch to the cooking.

The recipe for rustic apple pie step by step

Here are the steps to prepare your rustic apple pie:

  • Prepare your pie crustby combining flour, cold butter, salt, cold water and almond powder
  • Prepare your filling by washing then slicing your apples (peeled or not)
  • Roll out your dough piece in a circle on a floured work surface
  • Brown your sliced ​​apples with butter and vanilla sugar
  • Then place the sliced ​​apples in the center of the dough, fold the dough on all sides and sprinkle with flaked almonds
  • Bake for around thirty minutes of cooking then serve with a scoop of ice cream, hum!

Tips for a successful rustic pie

Use good, very cold butter and ice water. When you add the butter and water to the flour, you will get a sandy texture and that is what we want.

Don’t overwork the dough. Once the dough starts to clump together, that’s a sign that you can stop working it, make a ball and let it rest in the fridge.

The dough

  • 250 g flour
  • 50 g almond powder
  • 1 c. tbsp brown sugar
  • 100 g soft butter cold, cut into cubes
  • 1 pinch of salt
  • 1-2 c. tbsp water frozen

The garnish

  • 4 apples (of a variety that holds up to cooking)
  • 1 c. tbsp brown sugar
  • 30 g butter
  • 1/2 vanilla pod (or 1 tsp vanilla extract)
  • 1/2 grenade
  • 2 c. tbsp flaked almonds
  • 1 egg yolk for gilding
  • Vanilla ice cream for serving (optional)

Steps

  • Mix with your fingertips in a salad bowl, or in a mixer, the flour, salt, brown sugar, almond powder and butter cut into pieces. Add 2 tbsp. of cool water, knead and add a little more if necessary.Form a ball, wrap and let the dough rest for at least 1 hour in the fridge.
  • Peel, core and cut the apples into large slices. Brown them in a pan with the butter, brown sugar and the scraped seeds of 1/2 vanilla pod (or vanilla extract)
  • Preheat your oven to 180°C (350°F°). Roll out the dough into a disk approximately 30-40mm thick and place the dough on a sheet of baking paper.
  • Arrange the apple slices in the center of the dough, leaving 4 cm of free perimeter. Fold the dough gently over the apples. Brown the edges with egg yolk and sprinkle with flaked almonds.
  • Bake for approximately 35 minutes. Meanwhile, open your pomegranate and remove the seeds. Reserve in the fridge.
  • Once out of the oven, let the tart cool then sprinkle with pomegranate and serve with a scoop of vanilla ice cream for even more deliciousness!
