The rustic potato cake is a recipe that will win you over at first taste. Easy to prepare at home and ideal to carry for a trip to the seaside or in the mountains, perhaps on Easter Monday! A delicious savory potato pie to be enjoyed even at room temperature, made with a homemade shortcrust pastry flavored with thyme, to further enhance the flavor of the filling! The filling is creamy like that of a quiche Lorraine thanks to the egg and cream mixture, while the addition of diced potatoes and provolone makes it super tasty. As a decoration and to give an extra touch to ours savory cake we chose to garnish the surface with slices of potatoes which will become beautifully golden when cooked! You can choose to enrich the rustic potato pie as you prefer, perhaps adding some cured meats, such as bacon or speck, or even creating a vegetarian variant, such as the rustic potato and onion pie!
