Venere rice and fish arancini recipe
Arancini, what a passion! In this recipe we offer you an alternative to the famous Sicilian rice timbales filled with ragù and peas. The Venus rice and fish arancini, in fact, are made with black rice, a fine quality of grain known in China for centuries but, until the nineteenth century, reserved exclusively for the Emperor’s banquets due to its rarity. Venus rice has a very particular aroma that recalls the fragrance of freshly baked bread and goes very well with fish, which is why we have already created another recipe with this combination: small glasses of Venus and sword rice, simple and appetizing . In this recipe we have created a filling of shrimp, scampi and mullet, with the addition of peas which make up the rich filling of the arancini. To make the arancini more compact when you shape them, add two tablespoons of rice starch to the Venere rice while cooking, because this type of grain contains very little of it!
