Step by step recipe for carrot roulade with sun-dried tomatoes
Peel and grate the carrots on a coarse grater and fry in a pan with olive oil. Add spices, chopped dried tomatoes, spices and mix. Transfer to a bowl and set aside to cool.
Separate the whites from the yolks. Add the yolks to the carrots and beat the whites until stiff. Add flour and whipped foam to the carrots and mix gently.
Spread the dough evenly on a large baking tray lined with paper and bake for about 20 minutes at 180 degrees.
Spread the cooled cake with mascarpone cheese, arrange the salmon slices and wrap them in a roulade.
Serve warm or cold.
